Baked Chicken Tender Spinach Salad

I love a good salad.  A salad is a great way to eat your veggies! I really like to use spinach as my leaf base.  Spinach is packed with vitamins and minerals.  It is high in vitamin A, Bs, C, K and in manganese, iron, folate, magnesium, calcium, potassium, zinc as well has fiber and Protein.  Spinach is a power food that you can benefit from.  This Green Smoothie and salad are yummy ways to eat spinach.  I like to make a big batch of this salad and keep it in the fridge for a quick healthy meal for the next few days.  Not a big Spinach eater?  Give this one a try! We love it at our house.

First I bake my chicken tenders.  I buy a big bag of frozen tenders from Costco.  From frozen it takes about 25- 35 minutes at 350. This no salt seasoning is the only thing I put on them and it makes the chicken yummy! While I am baking my chicken I boil my eggs.  I place eggs in a pot and fill with water until an inch above the eggs.  Once water starts to boil, cover, turn off heat and set timer for 18 minutes.  Then place in running cold water, when eggs are cooled, peel.

I then place the spinach, diced veggies, shredded cheese, and eggs in a big bowl.

Top with chicken tenders and favorite dressing.  I love honey mustard. 🙂

Baked Chicken Tender Spinach Salad

Serves about 6

  • Baby Spinach (I get the big plastic container of Organic Spinach from Costco) about 6 cups (I measure a cup by a handful)
  • 1 medium tomato, diced
  • 1 small green pepper, diced
  • 3 Tbsp shredded cheese (optional)- I used mild cheddar
  • 4 Hard boiled eggs, sliced (I boil extra for a quick protein snack)
  • 6- 8 (about 1 pound) Chicken tenders (I bake extra to have on hand for quick meal)
  • Favorite salad dressing
  • No salt seasoning

Sprinkle no sat seasoning and bake chicken tenders at 350. From frozen 25-35 minutes.  From fresh about 20-25 minutes or until juice run clear.

Boil eggs.  Place eggs in a pot and fill with water until 1 inch above eggs.  Set on high heat until water starts to boil.  Then cover, turn off heat and let sit for 18 minutes.  Then drain hot water and run under cold water.  Peel once eggs are cooled.  It helps to peel eggs under a slow flow of cold water.

Place spinach, diced veggies, sliced eggs and cheese in a bowl and toss.  Top with Chicken and favorite dressing.

Store extras in the fridge.
