Oven Roasted Asparagus
(Best way to eat asparagus)
I love asparagus. I use to steam it or boil it, which are both good ways to eat asparagus. BUT then I tried oven roasted asparagus. Wow! If you haven’t had asparagus this way you really are missing out. We had this last night for dinner and my 3 year old ate it like candy. No joke! He ate more asparagus than me!! I cut up small bite size pieces to give to my 1 year old and I was shocked and even he ate it! We all were happy munching on some asparagus and I was really happy everyone in my family was eating vegetables, which can be hard with kids. Give this recipe a try and let me know how it goes!
When I buy asparagus, I like to look for the skinnier pieces instead of the really thick ones. That is just a personal preference. Preheat oven to 425 F. Wash off the asparagus and cut off the tough white ends. Sometimes I can cut off up to 1.5 – 2 inches. I like to make sure I get the tough part off. Spread the asparagus in a single layer on a baking sheet. Lightly drizzle with olive oil and sprinkle with salt and pepper.
Bake in the preheated oven for 10 minutes. That’s it! Easy!! Poke with a fork to make sure they are tender. Mine are done at 10 minutes, but ovens can vary.
Oven Roasted Asparagus
1 lbs of Asparagus
olive oil
salt and pepper
Preheat oven to 425 F. Wash and cut off tough white ends of the asparagus. Arrange on a baking sheet in a single layer. Drizzle with olive oil and sprinkle with salt and pepper. Bake for 10 minutes or until when poked with a fork it is tender.
