I am always on the lookout for SIMPLE veggie sides to have with dinner or for meal prep lunches. I think I would have to say that Oven Roasted veggies are one of our top!!
My husband isn’t the biggest veggie eater, but when I make these Perfect Roasted Veggies he is always excited and eats a good side of veggies!
First, cut up the veggies and place in a microwave safe bowl and add a little bit of water. Microwave for about 4 and a half minutes. You are just going for a slightly tender veggie here. They will finish cooking in the oven.
Spread the partially cooked veggies on a foil lined baking sheet and spray with cooking spray. Drizzle a little olive oil over the veggies and sprinkle with a no salt seasoning (just seasoning salt without the salt for lower sodium, go ahead and use seasoning salt if that is what you have).
Bake at 400 F for about 20 minutes or until roasted and fork tender.
Perfect Oven Roasted Veggies
2 1/2 cups broccoli florets
2 1/2 cups sliced carrots
1/4 cup water
1/2 tbsp no salt seasoning
additional salt and pepper if desired
Preheat oven to 400 F. Line a baking sheet with foil and spray with cooking spray, set aside.
Cut up carrots. Place all veggies in a microwave safe bowl, add the water and microwave for about 4 minutes 30 seconds or until veggies are slightly tender. (they will finish cooking in the oven). Drain the water. Spread veggies on the prepared baking sheet. Drizzle with olive oil and sprinkle with no salt seasoning and additional salt and pepper if desired. Bake for about 20 minutes or until veggies are roasted and fork tender.
