Refreshing Strawberry Spinach Salad with Poppyseed dressing

Happy St. Patrick’s Day! Another fun holiday! 🍀 Did the leprechaun leave some gold coins around your house today?? He did at ours. My boys were hunting for him for the quick sneaky lil’ guy.

I would love to hear the fun things you and your family do on St. Patrick’s Day.

Do you make a green breakfast? Have green milk? Eat green snacks?? Festive dinner??

For St. Patrick’s Day dinner I like to make a lot of “green” foods. One of my favorite green salads is this Refreshing Strawberry Spinach Salad with Poppyseed dressing. Perfect as a side with your festive dinner or add some grilled chicken and make it the main course 😉

Bonus— the dressing has NO added table sugar!! It is sweetened with honey and is AMAZING!

Strawberry Spinach Salad with Poppyseed Dressing

  • Servings: 6

Ingredients

5 cups fresh baby spinach (5 handfuls)

1 cup sliced strawberries

1/4 cup slivered almonds

For the Dressing:

1/4 cup olive oil

3 tbsp red wine vinegar

2 tbsp honey

2 tsp poppyseeds

Directions

In a large bowl, toss spinach, strawberries and slivered almonds.  In a small bowl whisk together oil, vinegar, honey and poppyseeds. Dish up salad and drizzle with dressing.
