I love cooking in the slow cooker. I love throwing food in it in the morning and then when our house gets a little crazy around dinner time, that is one thing that I don’t have to worry about, making dinner. This is another meal that my family loves and you can exchange the vegetables to your family’s liking. It is really easy to put together. It uses cooked rice, so I usually use extra rice I cooked from a previous dinner I made and that really saves time putting this meal together. This passed my 3 year old test and its a great way to offer a good variety of veggies. My husband loves this for his lunch the next day too.
Put all of your ingredients into the slow cooker. The rice is below all my veggies, ham and eggs.
Mix it all together. Make sure the egg is well mixed all over the other ingredients. Cover and cook on High for 3-4 hours. Until you can see the egg cooked on all the ingredients. I give it a stir a couple times while it’s cooking.
Slow Cooker Ham Fried Rice
Serves about 6
- 2 1/2 cups Cooked Rice (I used Brown)
- 2-3 Cups diced veggies– ( I used carrots, peas, corn, celery)
- 2 eggs
- 1 1/2 cups diced ham
- 1/4 cup soy sauce (I like to use low sodium)
- 1 tsp Worcestershire Sauce
- Small splash Rice vinegar (Optional– just fine with out)
- pepper to taste
Mix all ingredients together in cooker. Cook on High for 3-4 Hours. Stir a couple times while cooking.
