There are SO many benefits having quinoa in our diet. It’s one of the most protein-rich foods that we can consume. It also contains twice as much fiber as most other grains, and it contains iron and magnesium.
During every one of my pregnancies, I had very low iron levels. This is a yummy, savory soup that would benefit and cater to expectant mothers or moms looking for an easy meal to pair up with your kids grilled cheese! Below is the recipe.

Lemon Chicken Soup with Quinoa

INGREDIENTS:
1 Tbsp Olive Oil
2 Carrots, peeled
1 Onion, chopped
1 tsp minced garlic
4 cups of low-sodium chicken broth
1 cup quinoa
3 cups of water
1 tsp dried basil
Salt and Pepper, to taste
2 cups spinach, cut up
2-3 cups cooked chicken (I like to use a rotisserie chicken to save time)
1/2 cup of lemon juice, or juice from 3 lemons, to taste

STEP 1: Place oil, onion, carrots and garlic in a saucepan and cook until the they are softened. (5 minutes)
STEP 2: Add the broth, quinoa, water, basil, salt and pepper. Let it simmer for 10-12 minutes. If by the end of the time, the soup appears thick, add another cup of water to make it the consistency that you prefer.
Step 3: Add chicken and spinach and lemon juice. Once spinach is wilted, the soup is ready to serve!
