Pumpkin Chocolate Chip Cookies
Only 3 Ingredients
Low Fat & a Healthier Version of a Cookie
I love the fall time. One reason I love it is because it is time for pumpkin flavored food 🙂 YUM! I felt this was an appropriate recipe to share with Halloween only a couple days away! We love Halloween at our house (and what kid doesn’t love getting bags full of candy!!) We have a Captain America, Ninja Turtle and a little pink baby skeleton. What are your kids dressing up as?? I know I am posting a cookie on a health and fitness blog, BUT moderation in all things right? 😉 Plus this version of Pumpkin Chocolate Chip Cookies are low fat and packed with pumpkin puree. Pumpkin is high in fiber, vitamin A, C, E and K, potassium, Iron and Manganese. Pumpkin is also naturally low in fat, sodium and cholesterol. Bonus while eating a cookie!! These cookies are SO easy to whip together and there are only 3 ingredients. You don’t need to feel so guilty when you eat one of these yummy fall festive cookies, but it still is a cookies and it still has sugar. Like my husband’s Grandpa would say, “It’s a treat, not a meal”. Enjoy 🙂
These yummy things are so easy to make. Get your ingredients. If you don’t like chocolate chips (I don’t know who doesn’t) then I guess just use 2 ingredients. 🙂
Mix the cake mix and the pumpkin puree together, then add the chocolate chips.
Then Spoon the dough onto a lightly sprayed cookie sheet. I like to use two spoons when I do this part.
Bake at 350 F for 15- 18 minutes or until the cookie bottoms are lightly golden. Every oven bakes different. Keep an eye the first batch you bake.
My family, especially my boys (okay and me too), love these cookies. This is an easy recipe to have your kids help with and let them eat some chocolate chips while you take turns mixing 🙂
Pumpkin Chocolate Chip Cookies– Low Fat
1 Box Spice Cake Mix
15oz can 100 % Pumpkin Puree
3/4 cup Chocolate Chips (I use semi sweet)
Mix the cake mix and the pumpkin puree until well mixed (make sure you get all the powder mixed in well) then fold in the chocolate chips. Spoon onto a lightly sprayed cookie sheet. Bake at 350 for 15- 18 minutes or until the cookie bottoms are lightly golden brown. Let cool on the pan for about 5 minutes, then finish cooling on a rack.
