Peanut Butter Chocolate Chip Energy Bites
There are some days that seem to be more busy/crazy/hectic than others. I find that on those days if I don’t plan snacks and a water bottle to toss in my purse to munch during the crazy day then my energy drops. Do you have those days?? The days that you can not afford to be lacking in energy because you need every ounce of it. These Peanut Butter Energy Bites are great to store in the fridge and grab as you are walking out the door or put in a bag and toss in your purse and snack on when needed. Plus, being prepared with snacks for a busy day will help you not make an unwanted stop at a fast food joint and eating something you may wish later on that you didn’t. 🙂
These easy to make- no bake- ENERGY BITES are called ENERGY BITES for a reason. They are packed with energy producing ingredients– oats, flaxseed, peanut butter, honey..! Give these a try and let us know how you enjoyed them 🙂
Peanut Butter Chocolate Chip Energy Bites
Ingredients
1 1/2c Old Fashion Oats
1/2 cup unsweetened shredded coconut
1/2 cup ground Flaxseed
1/2 cup mini chocolate chips
1/2 cup smooth peanut butter (I used Jiff natural & low sodium)
1/3 cup honey
1/2 tsp vanilla extract
Instructions
Mix all ingredients in a big bowl until well combined.
Roll mixture into small balls, about 1- 1 1/2 in.
Place on wax paper lined baking sheet
Chill in fridge for about 1 hour or until set
Store in a closed container in the fridge.
